Yes it would still be a 10MBit connection....very slow.

There are quite a few mac programs that will convert DV to MPEG2 files.
MPEG2 files are used as standard on DVDs.

A Program that ships with Final Cut, and DVD studio pro - 'Compressor' will create MPEG2 files in many formats.

There are also many other programs that will do this.
