Will running 2 -3 apps, catalyst and something else (keynote, logicpro,...), on the same macpro be a problem?

I would never recommend that you run any app at the same time as catalyst - even running safari -
safari is a horrible resource hog and write and reads from the disc a lot.

if you application does this then dont do it.

applications have average load, and peak load.
the peak load is much important to a real time application.
in real time applications, typically you never want the computer to do something else. ever.
because doing its main thing is so important.
