I am running Catalyst 4.40_m329 on a mac pro quad-core, 2.8 Ghz with 3GB memory. The Graphics card is a NVIDIA GeForce GT 120.
And my question is if the software will be able to run "more smooth" with more memory?

Catalyst is an app to which adding more memory will make no difference.
The graphics card, the nVidia GT120 is a bit on the rubbish side. Other things that make a difference is an SSD drive - run the OS on the system drive and install an SSD drive to play back the media.
If I were you I'd go for a beefier graphics card. You can get PC nVidia GTX285s on ebay modified to work with Mac EFI for a couple of hundred quid. Otherwise it's the more expensive nVidia Quadro card.

Quadro 4000 for mac is the only 'official' Nvidia for Mac card - and is currently very good - but is about £600-£700
An alternative to the 'firmware adjusted' GTX285 and similar performance to the Quadro 4000 is the 'firmware adjusted' GTX480 - new on the 'firmware adjusted' market and about half the price of the Quadro 4000
GTX480 (PC version) is readily available.
GTX570 may also be a contender - TBC
